There is overwhelming information about gluten consumption and its effects on the body. Celiac disease affects 1 out of 133 people (and there is some suspicion that the screening for this is inaccurate). Many people with Celiac disease are unable to gain weight, however there is new information suggesting that the largest undiagnosed group of gluten intolerant people are actually overweight or obese (their bodies think they are "starving", so it packs on the pounds.) This can be combined with the fact that an overweight person with Celiac can feel ravished even though he or she has eaten a sufficient amount because the villa in his or her intestine is not absorbing nutrients.
Gluten intolerance is linked to many different chronic illnesses and conditions. Just as every human body reacts differently to drugs and or medications, different people react in different ways to gluten as it acts as an "opiate". Some studies show how gluten changes the chemistry in the human brain and gluten consumption has been linked to Autism Spectrum Disorders as well as misdiagnosed giftedness in our youth.
